Moringa Rice

Most Filipinos would get energy from eating rice. In fact, Filipinos would not be felt full if we don't eat rice in every meal! So if it is time to eat breakfast, lunch or dinner, we make sure to serve a platter of rice on the table :)

I just want to share with you that the rice I cook could be more interesting to eat because it can be more nutritious this time.  Yes, i said it right--more nutritious!

I know we are all familiar with Malunggay (Moringa Oleifera), it is widely known as a "miracle tree" because of loaded benefits it can give-- from roots, trunk, leaves, flowers and seeds. Here in our village, you can see at the front of almost each house planted the Malunggay tree. I am not fortunate to grow mine that is why when i need it for my menu, I would just ask from my neighbors and they were generous to allow me get bunches of leaves from their trees. When we were in Taguig, i also blessed to have a friend who supply malunggay leaves for me.

Fresh Malunggay leaves can be added to dishes. In fact, i make it an alternative to sili leaves when i cook tinola. To a practical mom like me, even when the leaves get dried, it can still be useful! And that's what i added to rice to make it more nutritious.

How to make powdered malunggay?

1. Dry the leaves under the sun.
2. When the leaves are well dried, crush it using your bare hands.
3. Put it inside the glass container and reserve for consumption.

Here is the Step-By-Step Photos in cooking Moringa Rice

Wash  the rice. Add enough water according to the variety of rice you will cook. Place over fire until it boils.

When it is boiling, add 3Tbsp of dried  powdered malunggay.

Mix it.

Cover and set to low fire until it is cooked.

TCP JAM From SCRAP!

Jam typically contains both the juice and flesh of a fruit or vegetable. The term 'jam' refers to a product made of whole fruit cut into pieces or crushed and heated with water and sugar to activate its pectin before being put into containers.

From my previous blog regarding juicing, i have mentioned that when the fruits got extracted and produced the juice, the juicer separated the pulp which is fiber. Thank God for the knowledge He imparted to a practical mom like me that wasting is strictly no room! I have to think of what could possibly do with those fiber from tomato, cucumber and pineapple that i used for juicing. Gladly that jam runs quickly into my mind, and that i began to do it!

I am excited to share with you this very simple jam that i made from a scrap and enjoyed by my son and me spreading over the plain crackers. For those who love to do juicing of  fruits or veggies, you could try to make jam too out of the separated pulp and fiber!

How to do JAM from scrap

1. Put the pulp/fiber in a sauce pan.
2. Add the sugar depending on how sweet you would like it.
3. Add water (mine don't have)
4. Cook it with constant stirring until reach the consistency you wanted for a jam.
5. Let it cool and spread over on plain crackers.
6. Serve!

My sons' birthday is over and i have left over of sliced tomatoes and cucumber that was used for salsa dip for nachos. I was thinking of what can i do to all of these left over, and i also have pineapples to add on. Then it came to my mind of why not juice it since i owned a juicer! I just wonder if finely sliced tomatoes and cucumber could work on with the juicer..let's see!

I heard that juicing is beneficial for our health. Many articles of juicing are popping out to share the benefits they got in taking concoction from fresh fruits and vegetables. Many people are getting more aware of wellness thing in a woozy world. I hope I could start a healthy lifestyle gradually in my own little way by juicing.

Let me share with you how we did it together with my youngest son. It is very easy to make if you have juicer! Just put the combinations of fruits and vegetables you would like to make for juice in the juicer starting with the leafy, follow with soft and finish with hard veggies or fruits.The juicer will extract the juice and leaving off the pulp and fiber. Pour the juice in a glass with ice and ready to drink!

Basic Steps in Juicing

1. Wash all fruits, vegetables and herbs well

2. Follow the manufacturer's instructions for juicing—every juicer machine is different.

3. Add the most delicate ingredients first, such as leafy greens and herbs.

4. Follow with soft vegetables and/or fruits (tomatoes, berries, etc.).

5. Finish with hard vegetables and/or fruits (apples, celery, etc.).

6. Drink fresh juice within a day or freeze it.
