Ube-Macapuno Pudding

Last Christmas my kids requested for pizza for our Noche Buena. The reason why i did not cook and just ordered a huge pizza from Calda and waited for it to deliver.


This time I chose to prepare for our Media Noche. Aside from Carbonara and Pizza again! (This time a home-made Pepperoni pizza). I made this authentic Ube-Macapuno pudding to add on to our desserts.

And I am generous and happy to share my recipe!

INGREDIENTS:

2 cups evap milk
1 big can condensed milk
1 small bottle sweetened macapuno
1/2 cup cornstarch
purple yam (ube) flavoring
toasted coconut

PROCEDURE:

1. DISSOLVE CORNSTARCH IN MILK.
2. ADD ON 2 CUPS SWEETENED MACAPUNO.
3. BRING TO BOIL UNTIL THICKENED.
4. POUR IN A CONTAINER.

5. TOP WITH MACAPUNO

AND SPRINKLE WITH TOASTED COCONUT.

6. CHILL BEFORE SERVING.

Our Christmas 2014

It's our 2nd year of celebrating Chistmas in Cerritos Heights. Last year, we spend it with the whole family because hubby's vacation lengthed within the season. I can say that nothing compares in celebrating Christmas with the family complete. But incomplete family members should not be a reason to not be happy on the ocassion. So whether hubby is not with us, we just reminded that Christmas is Jesus' birthday that whether we are complete or incomplete, with more foods or less, it must be celebrated!

I did not cook this time. I asked my kids what they want. When they said pizza, i think of something different! Then it came across my mind the number of pizza parlor which i saw from a tarpauline posted on a tricycle which delivers a huge pizza. I called them the day before the delivery so they could prepare it earlier and deliver it on time.

It was a hassle-free Christmas for me in preparing food this time. And Calda Pizza Cavite made it for us!

DFA NCR South

Finally got my passport!

It's no longer hassle to get  passport nowadays. From filling up the application form, getting schedules for appointment, finding the location up to releasing, it's easier!

Application can be filled up thru online. Though you still need to line up to pass the requirements, it is not longer compared lining up at DFA main office. They extended their service through nineteen mall-based Regional Consular offices.

Good news to the NCR-Southerners! They put one here in the South which is accessible for me to get there from Molino Bacoor Cavite via Daang Hari. It is located at the 4th Floor inside Metro Department Store in Alabang Town Center.

For the first-time applicants like me, here are the list of Requirements you should have completed  before filling up the application online, choose the location and schedule you will pass your requirements and for the appearance. If you are done the online process, they will email you for the confirmation of your schedule of appearance.

There are three steps you will do when you get to the consular office after Checking your documents.
1. Processing Window - approval of documents.
2. Cashier Window - Pay the fee a). regular P950; b). Saturday (express) P1200
3. Documentation and picture taking. Check all the information (spelling) that will print on your passport.
4. Pay P250 for Delivery fee (Optional)

They will give you the receipt stamped with the scheduled releasing date for pick up passport. It will count 10 working days for pick-up and 3 working days for delivery.

Take Note:

You don't need to bring passport ID pictures when you get there. They provide it that comes in hollographic security image.

Bring all necessary original and photocopies of documents as proof of your identity. One (1) Valid ID and atleast Three (3) supporting documents because they are strict when it comes to the requirements. If you lack one, you cannot proceed to the next steps.

On releasing day, re-check all the information typed in your passport.

My 'No Bake' Cheesecake!

Oh! yes, you read it right on the title!--a no bake cheesecake. Hmmm..I know it's not only me who crave for cheesecake and wanted to make one by self. I really love sweets but not too sweet desserts. So, in making my own, I could make a precise sweetness that I want. I also love to bake but unfortunately, i don't own an oven so I couldn't bake. But that did not preclude me from making desserts even cakes! Thanks to the internet that I could easily search on for a no bake recipes for cheesecake! Since this is my first time to make a cheesecake, I opted to use a high quality cream cheese of Philadelphia.

that comes with FREE measuring spoon.
