Healthier Chicken Adobo On The Go!

If there is someone whom i owe my skills in cooking, it was non other but to my mom. At an early age of 11 years old, I was in 5th grade that time when she first taught us (me and my sister) to learn and like the skills of cooking. It is very important that you must also like what you are doing so you can easily learn and enjoy it.

My parents were kind of busy buzzing bee at the market selling fruits for our living. We also help them selling fruits on weekends where it is usually the "Market Day". Before lunch time, mom would ask it's either me or my sister to buy ingredients to cook for lunch (we eat our lunch at the store). At first she would list on the ingredients of a certain menu and its procedure of cooking. But the next time she would ask us to to cook, she would just say the menu and it's up to you to buy and complete the ingredients for a certain menu then cook it! That wasn't hard for me because i save the note with ingredients and procedure by sticking it on the fridge door..hehehe. Until such time, i finally memorized and no need to look on it anymore.

One of the easiest menu she taught us is the adobo. Much easier to cook the chicken than pork by the length of time. This time, i just added a little twist on how to make it more healthier than the usual one. I have read from a blog of a friend that aside from what we know that chicken is rich protein source, it is also an anti-depressant! We also know that green leafy veggies are rich in vitamins, minerals and fiber. Well, i just added swamp cabbage on it, since it is commonly found at the supermarket. So, with the health benefits from white meat of chicken and leafy veggies, sure it is much healthier!

HERE'S THE EASIEST WAY TO COOK IT:

Ingredients:

1/2 kilo chicken (adobo cut)
soy sauce
garlic (crushed)
pepper ( i used powder)
a bond of swamp cabbage (or any green leafy veggies)
calamansi juice
bay leaf (optional, for some don't like the aroma of it, so as my kids)

Procedure:



1.In a pan, marinate the chicken with soy sauce, garlic and pepper.
2. Add one cup of water and bring to boil for 20minutes or as the chicken get tender. (Do not overcook)
3. Add the swamp cabbage (or any green leafy veggies you want :) simmer for another 2minutes for that and add the calamansi juice. Presto!

  1. Hmm...interesting twist adding the calamansi rind, was it tangy and bitter? Hehe, also thanks pati yung blog ko napasama pa dito hehe:)

    1. Joy, it should be calamansi juice, sorry. But if you wish to put on rind, better use lemon instead of calamansi so it will not taste bitter and gives more lemon flavor :)
